Maintain and Re-establish Circularity

On our farm “Gut Schloss Lichtengraben”, we base our work and economic activities on natural cycles. Fresh water is sourced from a private spring. Green energy is produced in the hydroelectric power station that is powered by the stream Lichtengrabenbach via the pond Inselteich. Countless beehives are home to swarming colonies of honey bees who give rise to a flowering biodiversity. And the sheep quite incidentally serve as natural lawnmowers around the ponds and the 100-year-old traditional orchards. Astrid and Andreas Rittler’s basic idea is a sustainable land use practice. You can feel it everywhere: They put this vision into practice with creativity and great care. They preserve the old and traditional in order to make it useful for our modern world.

Trout farming has always been of great importance. By literally taking the plunge and trying to fish or help produce unusual slow fish treats such as fish crisps, you can learn how the natural cycle of this “blue gold” works. If you’d like to get a deeper understanding, you can book a workshop. Fish your dinner, bring out the fishing nets as though they were floating on the water surface that’s reflecting the warm sunlight. Relax and dream. In this idyllic and peaceful retreat, you can allow your soul to take a break from the busy everyday life.

Locally Sourced Comes First

Every Friday, we serve warm smoked fish with horseradish sauce and bread in our farm shop “Fischerei zur alten Mühle”.
